SUSTAIN

For my fifth module at university, I was tasked with designing the bar and dining area of SUStAIN, a new restaurant owned by chef Anton Benet. He insisted the restaurant include the latest products, materials and finishes that incorporate sustainability, recycling and reuse. The budget was £250,000. It was up to me where the restaurant was located; I chose an empty retail space at 27 Clerkenwell Road, Clerkenwell, London.
